Per capita, Australians are one of the highest consumers of meat in the world and 90% of the pork and chicken we eat is factory farmed. Health, environment and animal welfare implications of these statistics are concerning to say the least, and there’s no question that this consumption is unsustainable from every perspective.
When you eat ethically raised meat from a responsibly managed system that mimics the way nature works, you are playing an active role in a food system that builds and supports soil, plant and animal health. Regenerative farming can also play a big role in positively impacting our climate by sequestering carbon, but I’ll leave that can of worms for another post.
Eating offal like liver, will dramatically bump up your nutrient intake, and will also be kinder on your purse strings. It is also ensuring less animal wastage, so all round, it can make you feel good about buying and eating it.
The suppliers below are committed to bringing you the best quality, sustainably managed, humanely treated, and most flavoursome produce. Some of them don’t feature liver on their websites, but they do stock it, or can get it in fresh with a little notice

Feather and Bone in Marrickville have a wonderful shop where you can pick up your goods, or they deliver all over Sydney. Feather and Bone are passionate about quality, supplying pasture-raised produce grown on regenerative farms. They run whole animal butcher classes and stock broths, good fats, gluten free bread, and quality dairy products. Very helpful and knowledgeable staff.

Mr Baille & Co in Rozelle are a whole animal butcher offering only pastured and free-range produce from regenerative farms.

Kingsmore Meats, Rose Bay, source their meat from small, independent local farmers that are humane, sustainable and ethical in their practices. They believe in nose-to-tail eating, so they reduce waste and have fantastic range of offal and stock bones. Easy online ordering for quick pick-up or delivery. Very helpful and friendly staff.

1888 CERTIFIED in Double Bay proudly supply only 100% grass-fed and finished produce. Liver doesn’t feature on their website, but they stock it daily.
The Meat Store, Bondi Junction & Taren Point

The name says it! Field to Fork at Bondi Beach and Vaucluse Ethically sourced grass-fed, free range meats. They also have a commercial kitchen where they prep family-style meals
